Shortbread originated in 12th century Scotland as a way to use up leftover bread dough by adding butter and sugar, then slow-baking it. The name comes from “short” – a baking term meaning crumbly due to fat content. Mary, Queen of Scots, loved petticoat tails (triangular shortbread), making it fashionable. The traditional scoring into triangles represented the sun’s rays, and breaking the circle was considered bad luck. Walker’s shortbread factory in Scotland still follows recipes from 1898!
