Biscotti means “twice-cooked” in Italian, dating back to Roman times when soldiers carried these hardy cookies on long journeys – they could last for months! The modern version originated in Prato, Tuscany, in the 14th century. Antonio Mattei’s bakery, opened in 1858, still uses the original recipe. Traditionally, biscotti are dunked in Vin Santo (holy wine) after dinner. The cookies’ hardness isn’t a flaw – it’s designed to soften perfectly when dipped!
