Sourdough is humanity’s oldest leavened bread, dating back 4,500 years to ancient Egypt! Gold Rush miners in Alaska and California were called “sourdoughs” because they carried starter with them everywhere – some of these century-old starters are still alive today! San Francisco sourdough’s unique flavor comes from local wild yeast Candida milleri and bacteria Lactobacillus sanfranciscensis. During the 1906 earthquake, Louise Boudin saved her starter by fleeing with it – that starter still makes Boudin Bakery bread today!
