Madeleines carry one of the most romantic and serendipitous origin stories in all of French pastry! Legend has it that in 1755, during a grand dinner party at the Château de Commercy, the Duke of Lorraine’s head pastry chef quit in a fit of rage just hours before the meal. In desperation, the household turned to a young servant girl named Madeleine Paulmier, who offered to bake small cakes using her grandmother’s recipe. She shaped the batter in the scalloped shell molds typically used for pilgrim badges, and the resulting delicate cakes were such a sensation that the Duke named them “madeleines” in her honor. The treats became so popular that they spread throughout the French court and eventually across Europe. However, madeleines achieved true immortality through literature when Marcel Proust featured them in his masterwork “In Search of Lost Time” (1913), writing the famous passage about how the taste of a madeleine dipped in tea triggered an avalanche of childhood memories
